To usher in the weekend, I just finished preparing this quick treat to tickle my taste buds
Ingredients (main dish):
– 1 cup of cooked rice/quinoa fusilli, 1 eggplant, 1 red bell pepper, 1/2 red onion, 3 garlic cloves, 1/4 cup chickpea powder, tomato paste, sun-dried tomatoes
– 1 teaspoon of masala spice, red paprika powder, 1 teaspoon ground turmeric, black pepper, 1 teaspoon lemon juice, salt
